Raw foods cooking expert Matthew Kenney proves that eating healthy does not have to be boring. Kenney was the latest ‘Celebrity Chef’ at the ninth annual St. Anthony Heart and Vascular Institute event.
Kenney is known for his special organic, vegan and sustainable style of food preparation.
“Back when I was fixing veal, beef, chicken, lamb and other meats, I would tell my friends that I would be a vegan one day,” said Kenney.
“After one week on raw foods, I felt better and realized, raw food is a lot more than it sounds like. Now that my palate has changed, I feel that this food is rich prepared the way it is.”
Kenney said he does not stick exclusively to a raw foods diet and if he craves something other than vegan food, well, he just eats it.
“My first attempts at some of these dishes was a little rough around the edges,” adds Kenney. “Especially since I was a chef for 15 years already; I really wouldn’t let people see what I made because it looked awful.
Kenney and his partner, Oklahoma City native Dara Prentice, opened the very first raw foods restaurant in Oklahoma City last year named, 105 Degrees.
The name represents the highest temperature food should be cooked at to maintain the essential nutrients.
Today, most people accept cooked food as the normal means of supplying the body with nutrients, not realizing that the living cells of our bodies do not take nourishment from the dead and artificial ingredients found in cooked food. 105 Degrees is located at 5820 N. Classen.
